  • 1 x 300 g puff pastry sheet
  • 220 g Foie Gras wrapped in a cloth
  • 1 pomegranate
  • 1 mango
  • 2 passion fruits
  • Pectin
  • Maldon salt / black pepper

  • Defrost the pastry for 10 minutes.
  • Switch on the waffle maker.
  • Roll out the pastry to a thickness of 0.5 cm in the shape of a 7 cm by 7 cm square.
  • Bake the pastry for 12 minutes in the waffle maker.
  • Open the passion fruits and cook the pulp with the pectin for 3 minutes.
  • Dice the mango.
  • Open the pomegranate to remove the seeds.
  • Arrange the fruits and foie gras on the toast. 
  • Serve with Maldon salt and black pepper.
